Gapao means basil in Thai.
Normally, gapow is made with minced chicken, but at Lotus they use a rare type of minced pork called ancient pork.
The ancient pork is juicy but has a clean aftertaste, and is coarsely ground to give you an enjoyable texture.
Finish by mixing well with the soft-boiled egg and basil on top and enjoy.
